Maple Glazed Salmon

A favorite recipe of Amanda and Kalon, this simple dinner is both light and incredibly tasty.

Ingredients
  • Cut of Salmon
  • 1 tbsp of Canadian Maple Syrup (the real stuff)
Steps
    1. Cover the each side with 1/2 tbsp of the maple syrup. It should be a pretty thin layer.
    2. Let the salmon sit for 15 minutes.
    3. Preheat grill to reach maximum heat.
    4. After waiting 15 minutes on the salmon, put it on the grill.
    5. It should need no more than 5-6 minutes, as the salmon will cook through quickly.
    Sides

    A simple brown rice goes well with the salmon. Simple side for a simple dish. Enjoy!


    (Healthier) Chicken Quesadillas

    Fun, fast and pretty yummy! We love quesadillas!

    Yield: 3 Quesadillas

    Ingredients:
    Parchment paper
    3 Large Tortillas 
    1 cup Tex Mex Cheese ( Light Med Cheddar & Monterey works & saves calories!)
    1 small onion
    1 small Roma Tomato
    1/2 red bell pepper
    1 x-large raw chicken breast (or 2 smaller)
    1 pkg taco seasoning
    (or mix yourself to keep sodium down: chili powder, paprika, onion powder, cumin, garlic powder)

    Steps: 
    1. Cut up raw chicken breast(s) into smaller chunks (nothing fancy, we just want it to cook faster)
    2. Cook chicken in pan on stove top with a splash of water on medium heat, cover and stir periodically to keep from sticking 
    3. While chicken is cooking, dice the tomato, onion and red pepper; set aside
    4. By now your chicken should be cooked and starting to brown, add 3/4 cup of water and taco seasoning (the amount is up to you, some like it spicy/salty, some...not so much)
    5. Turn down stove heat to low/med and simmer. Stir periodically. While simmering, the chicken will soften a bit, this is your opportunity to break the chicken down to smaller pieces with your spatula/fork/whatever. Simmer until most the water has evaporated (about 10 min)
    6. Turn on George Foreman grill to high and let it heat up (If Foreman-less - no worries! -  you can bake in the oven on high heat until the cheese is all gooey)
    7. Tear 3 pieces of parchment paper and lay out a tortilla on each for assembly
    8. Dress only half of each tortilla.Sprinkle lightly with cheese. Next comes seasoned chicken. Then some of your diced veggie mix. Then finish off with another sprinkle of cheese (a little heavier sprinkle this time ;)
    9. Fold the undressed (sexy!) portion over the filling. Fold the parchment paper over too. This will prevent delicious cheese loss as well as sticking but should still give you light grill lines.
    10. George foreman that baby (or bake) until tortillas brown and you see melty cheese

    Sides:
    We ate these bad boys all on their own. 
    Opt for salsa as a healthier dipping choice instead of sour cream.
    (Kal doesn't really like either - crazy eh?)

    Chocolate Pancakes
    We wanted to make some-what healthy pancakes with what we already had in the kitchen. We found this recipe and messed around with it a bit. They turned out PRETTY GOOD except for I burnt mine! Served both of us (Yield: approx 5 medium pancakes)

    Ingredients
    • 1 cup Chocolate Milk
    • 2 tbsp white vinegar
    • 1 cup unbleached or whole wheat flour
    • 1 tbsp white sugar (reduce from orig recipe b/c using chocolate milk)
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • dash salt
    • 1 egg
    • 2 tbsp margarine
    • OPTIONAL: Chocolate Chips
    • Cooking spray
    • Maple Syrup 
    Steps

    1. Combine chocolate milk and vinegar in medium bowl and let sour
    2. Combine all the dry ingredients
    3. Add The soured milk to dry ingredients, along with egg and butter
    4. Whisk the shit out of it until all the lumpies are gone
    5. Heat up frying pan and spray with cooking spray
    6. Use a ladle or small cup to pour batter into pan (depends on what size you like your pancakes)
    7. Wait until edges are firm and bubbles come to the top, then flip and cook until brown.


    Sides

    Kal slipped in a couple chocolate chips after I had made the executive decision to omit them this round (sneaky jerk! lol). I topped my pancakes with syrup, light whipped cream and strawberries. I like cooking breakfasts like this, makes you feel all luxurious and special....until you have to clean up the kitchen after.
